Cottage Cheese Eggs

Cottage Cheese Eggs

Ingredients:

  • 2 Eggs
  • 2 Tablespoons cottage cheese (Small Curd 4% Milkfat)
  • 1 Teaspoon Mexican Seasoning (Or chili powder)

Preparation:

  1. Preheat a large metal or non-stick skillet to medium heat.
  2. Whisk eggs and cottage cheese together in small container, place in skillet.
  3. Sprinkle Mexican Seasoning on eggs (to taste).
  4. As eggs begin to cook start folding together, trying to keep wet sides down till done cooking.

Serve with or on wheat toast for a great balanced breakfast. Cottage cheese is a complete protein so it is a great protein boost to eggs.

That which is sold in American stores as 'Mexican Seasoning' is ussually just chili powder, possibly with some cumin in it. Making your own mixture of chili powder and other spices is a good idea. Salt and pepper are good stand-bys if you have no imagination at all.
